Great for dipping fruit, such as strawberries or raspberries or just on its own. UPDATE on 07/20/11: This recipe is CLOSE, but not exact. I tried making it again last night and it came out more like a soft fudge after cooling, so I need to try to adjust the measurements the next time I make it. Fidget For Fitness Pudding / Fudgy Like - Chocolate 2 c. Heavy Cream 2 T. Coconut Oil 4 T. Ghirardelli Unsweetened Cocoa 4 T. Granulated Splenda 1 T. Vanilla Extract (use REAL vanilla, not imitation) 1 T. Coconut Flour to thicken Optional: 1 tsp. cornstarch to thicken (check carbs) Whisk all ingredients over medium heat until it just starts to bubble. Just before it boils and starts to thicken, remove ¼ c of the pudding, put it in a small crock or bowl and add coconut flour (and optional cornstarch if you wish), whisk with a small whisk or fork until ALL lumps are removed and the pudding is smooth, return to the pot and continue to cook on medium heat for 4-5 minutes until it bubbles and thickens. Remove from heat and transfer to a Tupperware or pudding bowls. Cool UNCOVERED in refrigerator until completely cool, then cover. Eat plain or serve with strawberries, raspberries ...
